Vegan recipe

The kids watched 'What the Health' and decided to alter their diet...
This was tonight's experiment everyone liked.

Vegan Creamy Spinach Pesto

2 cups 'raw' cashew pieces, soaked in water 2 hours or more in a strong blender
1/2 cup extra virgin olive oil
1 package of fresh basil
2/3 cup nutritional yeast
16 oz of fresh spinach, cooked until wilted with excess water squeezed out (save water)
1/2 cup coconut milk or more as needed 
1 onion, sautéed
1 t of salt
1/4 t of nutmeg
add garlic and black pepper to taste (optional)

1.  Pour off water from cashew pieces, add all ingredients and blend.
2.  Add spinach water or coconut milk to extend.
3.  Serve over pasta of choice.
